Potato Rolls




The kids wanted to have fries for dinner. Now there were two issues with that request. First of all…I dint have enough potatoes and I had an empty bottle of ketchup…just my luck! I wasn’t going to get into the car and drive all the way to the supermarket… *singing* ain’t nobody got time for that! So I decided to try out potato rolls. All I can say is…I wish I had more potatoes and a bottle of ketchup!!

Ingredients:
  • Potatoes (Irish)
  • Butter
  • Herbs and Spices
  • Cooking oil
  • Eggs
  • Bread crumbs
  • Flour
Method:

  • Peel, chop,rinse and boil the potatoes in some water till soft.








  • Drain the potatoes and place the cooked pieces in a bowl.











  • Put some butter into the bowl and mash the potatoes.











  • In another bowl, break an egg, add your herbs and spices and whisk properly











  • Then pour the egg mix into the mashed potatoes. Do pour the mix slowly while you use your hand to mix the mashed potatoes. You don’t want it to be too soft…because you will be molding it later.

  • Roll the mashed potatoes and set aside.











  • Then its time to start frying but before then …you will need to coat the potatoes with a layer of flour, whisked egg and breadcrumbs to make the rolls crunchy.
 

  • In a deep pan …pour some cooking oil and when its hot…start frying the balls till golden brown.
 



Feel free to dig in with some ketchup!
