Chocolate Chip Muffins



The love I have for muffins cant be explained...so you can only imagine the kind of joy I have now that I can bake them. If I have to describe what a muffin tastes like, I would say...a cupcake and bread met, fell in love and gave birth to a MUFFIN. Muffins are so delicious and have waaaay less sugar than cupcakes...besides you can make it your own by using all sorts of berries or nuts or whatever you like...the options are endless. Its so easy to make and super yummy!



Ingredients:
  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
  • 2/3 cup milk
  • 1 stick of softened unsalted butter (100g)
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/2 tsp vanilla extract
  • 2 eggs
  • 1 to 2 cups of chocolate chips
Cinnamon sugar topping (optional):
  • 1 tbsp white sugar
  • 1/2 tsp cinnamon


Method:
  • Pre-heat your oven and grease muffin tin with butter and set aside or use paper liners.

  • In another bowl whisk butter, white sugar and brown sugar. Then add in the eggs, milk and vanilla extract and beat till smooth.
  • Sift the flour, salt, cinnamon and baking powder into the butter mix. You should get a slightly thick batter. Don't over mix.
  • Coat the chocolate chips in some flour so that when its mixed with the batter and put in the oven, the chocolate chips don't sink to the bottom of the muffin...and we wouldn't want that. You can also use any kind of chocolate you choose...just chop them up in small pieces.



  • Then gently mix in the chocolate chips into the batter.

  • In another bowl, mix some sugar with cinnamon to sprinkle over the top of the batter before baking. This is optional.
  • Use an ice cream scoop or spoon to put the batter in the muffin tray about 3/4 full and sprinkle some cinnamon sugar on the batter before you pop it into the oven for 15mins or until a toothpick inserted into the muffin comes out clean.


  • When ready leave in the pan to cool for a few mins before taking them out. If you take them out before they are cool, they would break. I know your house would be smelling amazing by this time but just be patient before rushing to eat that little piece of deliciousness.
