Banana Bread


I have had my cooker for almost 3 years and have never used the oven until now...I dint even know how it worked. I guess it cos I was never interested in baking cos baking is completely different from cooking. You need to follow the recipe at least 90% of the time...and for me that's just "long tins". Well I decided to try out banana bread since I had some over ripe bananas...and the whole experience made me fall in love with my oven. The bread came out moist, soft and so yummy...and the aroma filled my home. I have been dulling since...you need to try it.


Ingredients:
  • 4 bananas
  • 2 Cups of flour
  • 1 teaspoon lemon juice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  •  1 1/2 teaspoon cinnamon
  • 1 cup sugar
  • 1 stick of softened unsalted butter (100g)
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
Method:
  • Preheat oven to 350 degrees F (175 degrees C), but i don't have a digital oven so I just used medium heat... and grease your pan with butter or cooking oil and a little flour...making sure to shake off the excess flour.
 

  • Mash the bananas into a bowl, add lemon juice and set aside










  • In another bowl combine the sugar and butter, add eggs, vanilla extract, mashed bananas and whisk very well.
 
 



  • Then sieve in all the rest of the dry ingredients (flour, cinnamon, salt, baking powder and baking soda) into the butter mix and fold in with a spatula. Do not over mix, so as soon as the flour has been combined with the butter mix...pour the mixture into the baking pan.
     











  • Bake in oven for about 60 to 70 mins or until a toothpick inserted into the centre of the loaf comes out clean. Once its baked let the bread sit in the pan for about 10 mins before attempting to take the bread out.
