The love I have for muffins cant be explained...so you can only imagine the kind of joy I have now that I can bake them. If I have to describe what a muffin tastes like, I would say...a cupcake and bread met, fell in love and gave birth to a MUFFIN. Muffins are so delicious and have waaaay less sugar than cupcakes...besides you can make it your own by using all sorts of berries or nuts or whatever you like...the options are endless. Its so easy to make and super yummy!

Bread Rolls
My oven and I just became best of friends so I have been
experimenting a lot these days. I decided to try out bread rolls and I must confess…there’s
nothing like fresh bread. When I saw the result after 3hrs of bread making…I had
to give myself a pat on the shoulder. Yea! I praised myself very well. Now I know what's in the bread i'm eating and its fresh...nothing can beat that.

Banana Bread
I have had my cooker for almost 3 years and have never used the oven until now...I dint even know how it worked. I guess it cos I was never interested in baking cos baking is completely different from cooking. You need to follow the recipe at least 90% of the time...and for me that's just "long tins". Well I decided to try out banana bread since I had some over ripe bananas...and the whole experience made me fall in love with my oven. The bread came out moist, soft and so yummy...and the aroma filled my home. I have been dulling since...you need to try it.
Potato Rolls
The kids wanted to have fries for dinner. Now there were two issues with that request. First of all…I dint have enough potatoes and I had an empty bottle of ketchup…just my luck! I wasn’t going to get into the car and drive all the way to the supermarket… *singing* ain’t nobody got time for that! So I decided to try out potato rolls. All I can say is…I wish I had more potatoes and a bottle of ketchup!!
Akara – Bean Cake
Hello everyone! I made akara for the first time everrrrr! *Jumping up and down with excitement* I woke up this morning with only one thing on my mind…AKARA! I just had to have some. Some hot ‘crispy on the outside and soft on the inside’ akara. I thought of going to Iya Tinu down the road to buy some but I decided to try it out myself…besides i’m trying to be a better cook. So I made a phone call to a friend of mine and she told me what to do. I might have done it a little different from the way she explained but it came out pretty good…if I do say so myself!
Okro Soup (Ila-asepo)
I haven’t eaten ila asepo in over 3 years cos hubby isn’t a fan. The funny thing is that we usually eat okro and stew but not the combined version. So I figured he just dint like the method used to make ila asepo. But today, I was determined to change his view on the soup. I tweaked the original recipe and made it my way and it turned out better than I had anticipated. Hubby was still not interested after I told him I cooked Ila asepo. I forced him to taste it and he finished my small pot of ila asepo. Trust me…it was that good…even the kids loved it and for me that’s a gold star.
Afang Soup / Okazi Soup
I fell in love with afang soup as a teenager when our calabar maid at the time made it for us at home. I couldn’t believe I had missed eating such a delicacy all the while. As much as I loved that soup I never learned how to cook it. Well lets just say, I never really had any reason to learn how to cook it. Besides, each time the cook was making afang, it just looked too complicated cos he would use a motar and had all sorts of vegetables in d kitchen and I just wasn’t ready to crack my brain. When I got married, I couldn’t eat afang except when I visited my folks or bought it from a local restaurant around…but all this changed recently.

Spaghetti and Veggie Sauce
I love love love spaghetti…its one of my favorite meals. It’s so easy and quick to prepare. When I’m tired I usually just boil spaghetti and eat it with chicken stew…I know that’s a boring combo…but it works for me anytime. Anyways, I decided to take my time and make some vegetable sauce with chopped gizzard and fried chicken.
Fried Chicken (Nuggets)
Over the weekend I took the girls out to their fave fast food. They were pretty excited until they couldn’t get their order of chicken nuggets. So I decided to surprise them with some home made chicken nuggets. It was my first attempt at it but it was waaaaay better than the fast food nuggets. Not to blow my trumpet or anything…but…i’m proud of myself 
Puff Puff (Puffys)
I woke up on Saturday morning thinking of what to make for breakfast. I decided to go for pancakes or eggs but guess what…no eggs! All because I was too lazy to go shopping the day before and to worsen the situation…there was also environmental sanitation…so no place would be opened till 10am. So I decided to go for “puffys”…well that’s what i call puff puff. I had the ingredients and decided to try it out for the first time. I just crossed my fingers and went ahead with the process. Funny enough, it wasn’t as complicated as I thought it would be…and everyone loved it.
Fried Rice and Spicy Turkey
I had just finished from a job and decided to stop by my parents’ house to wait out the traffic. I decided to get something to eat but ‘cause I was too lazy to fix something from scratch I decided to pop some fried rice I saw in the freezer into the microwave. While the rice was turning in the microwave I said a silent prayer so “PHCN” doesn’t strike and render me with cold rice. I actually found myself doing a “victory dance” when the sound of the microwave went off. “Abeg! Hunger no good.”
