It was my 3rd year wedding anniversary a couple o' days ago...and since it was a weekday, I suggested we just stay home and have dinner. Well now that my cooking skills are way better than my hubby ever imagined...he dint object to staying home. I must say...hubby was really proud of me.
Ingredients:
For the Special Fried Rice:
- Rice
- Veggie (spring onions, carrots, red peppers)
- 2 Eggs
- Shrimps
- Smoked sausage
- Soy Sauce
For the Shredded Beef:
- Beef
- Green bell peppers
- Red bell peppers
- Ginger (sliced)
- Garlic (grated)
- Corn flour
- Vegetable oil
- Soy sauce
- Seasoning
Method:
Special Fried Rice:
- Boil rice till soft and set aside to cool...don't forget to add salt to the rice. I spread mine out on a tray to properly cool. You can also boil the rice a day before.
- Fry the smoked sausage and set aside. I dint need to add cooking oil before frying cos the sausages had fat in them.
- Fry the eggs and set aside. I used the oil from the sausage to fry the eggs.
- Fry the shrimps for about 3 mins and set aside. I added a little seasoning to the shrimps before frying.
- Add some cooking oil to the pan and stir fry the spring onions and peppers for about 2 mins. Then add the carrots and cold rice to the pan and stir fry the rice for about 5mins.
- Add all the sausages, shrimps and eggs to the rice. Then add some soy sauce...about a table spoon or 2 depending on how much colour you want in the rice. If you prefer it without the soy sauce...then be my guest. As long as your okay with it.
- Stir fry for about 3 mins more and your special fried rice is ready.
Shredded beef sauce:
- Shred the beef into thin slices.
- Marinate the shredded beef in 1 table spoon of corn flour, 1 tablespoon of cooking oil, 1 table spoon of soy sauce and some seasoning for about 30mins.
- Heat up 3 tablespoons of oil in a pan and add the the beef into the hot oil and stir fry for about 8mins...then add d sliced green and red bell peppers, ginger and garlic into to the pan and stir fry for about 3 mins.
- Add half a cup of water into the pan and stir fry for about 3 mins and its ready.
