These red velvet cupcakes will blow your mind. This was my first attempt and it came out even better than I expected it. Super easy recipe...I mean you can bake them with your eyes closed..hehe! Anyways...I made these "yummy badboys" for my 3rd year wedding anniversary a few days ago and my hubby and I almost finished all 12 cupcakes over dinner. These cupcakes are so tempting...so try not to make them everyday.
Ingredients:
- 1 1/3 cups of all purpose flour
- 3 tablespoons of cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup of butter (softened)
- 1 cup white sugar
- 2 eggs
- 3/4 cup buttermilk
- 2 teaspoons white vinegar
- 1 teaspoon vanilla extract
- Red food colouring
Note :
To make butter milk, add 1 teaspoon of lemon juice to 1 cup of milk, stir and let it sit for 5mins.
Method:
- Preheat the oven.
- In a bowl sift together flour, cocoa powder, baking powder, baking soda and salt and set aside.
- Cream sugar and butter together.
- Add the eggs one after the other...making sure the first egg is properly whisked in before adding the second egg.
- Add the butter milk, vanilla extract, white vinegar and red food colouring. Depending on the type of colouring and how red you want the cake...add the colouring one teaspoon at a time till you get what you want.
- Then add the dry ingredients to the wet mix and combine gently...making sure not to over mix. If you were using an electric mixer before, switch to a hand whisk and stop whisking as soon as the dry ingredients have been properly combined.
- I just had to taste it...it smelled so yummy!
- Line your cupcake pan with cupcake liners and fill each cup with the cake batter about 3/4 full. I used an ice cream scoop just to make sure I scooped in the same amount of batter each time.
- Bake for about 20 - 25 mins in a preheated oven or until toothpick inserted into the centre of the cupcake comes out clean. Once out of the oven...let it rest for 5 mins before bringing them out of the pan to cool properly.
